Filosofia Maturano IGT Bio white wine no added yeastsFilosofia begins with selecting grapes, which are de stemmed and placed in concrete tanks with 20% stems. A starter made from whole grapes is added to promote spontaneous fermentation at temperatures below 18C for 20 40 days. After fermentation, the wine is left on the skins stalks for 10 months in cement vats, then pressed, and the free run wine is drawn off. The pressed wine rests in concrete for 3 4 months before bottling and is aged for 24 months
