He was first created as a special release to celebrate the birth of the third generation of the Brown cheese family Ceridwens son Cooper. Inspired by his mothers love of ashed goats cheese and his fathers fondness for a harder cows cheese Cooper is the best of both. Hes similar in style to Morbier: semi hard with a creamy texture, fresh acidic tones and a smooth caramel aftertaste. What makes him extra special though is
