In addition to blanking Infernal Grasp, you can use it to save yourself from a scenario where theres no good blocks, or hold it to back up your go-wide flunge
Blue has solid counterspells (Glorious Gale looks very strong in this format), and its bad removal is pretty much made up for by blacks numerous options
We also have lots of support pieces like Roost of Drakes to make tokens (and also kick!), Forgotten Ancient to refill Verazol with counters, Hadana's Climb which turns Verazol into an evasive 1-shotter, and Twinning Staff which lets us get an extra copy of our copied spells
Not dying to every pinger, small end of every dividable burn, being able to attack into a utility dude or 1/1 token and being able to block said creatures individually don't seem like much, but taken cumulatively, these things happen all the time
